Busy Mom Quick and Easy Chicken Fajita Recipe

Even though you may be at home all day, homeschooling can sometimes take every spare minute of your time. Especially if you’ve had one of those days when Suzy just wouldn’t get that math concept! On a day like that you need to be armed with a get ready fast supper that takes you from fridge to table blessing in no time flat. I thought I’d share one of my all time favorites with you guys!

Chicken Fajitas with Rice and Refried Beans

2 cans of white chicken meat (large cans)
1 pkg shredded Mexican cheese
Fajita flavoring package
1 pkg tortillas
1 green pepper
1 onion
Lettuce if desired
1 bag of rice/chicken broth
1 large can of refried beans – flavored
***Start your rice as soon as you get to the kitchen. Measure out chicken broth to cook your rice in. While the rice is cooking, cut up onion and green pepper, add a couple tablespoons of olive oil and fry. As the onions are cooking open up the refried beans and heat them. When the onions are translucent go ahead and add the canned chicken and fajita flavoring package. As soon as your rice is done. Put together your fajitas and top with cheese.
My family loves this dinner… you could add variations such as chips and cheese or a salad!
