Today is Blueberry Cheesecake Day!
I know there’s an “official day” for just about everything and everyone. Yet, don’t you think it’s fun to add a bit of “out of the ordinary” to your homeschool day every once in a while? I sure do… which is why I love celebrating special “food” days! So, in honor of this month’s Cheesecake day… here is a recipe that sounded oh… so yummy!

Blueberries ‘n Cream Cheese Cake
1-14 cups sugar
1/2 cup butter
1 teaspoon baking powder
1 teaspoon salt
2-1/4 cups flour
3/4 cup milk
2 cups blueberries
1/4 cup water
One 8-ounce package cream cheese, cubed
1/4 cup sugar
1/4 cup flour
2 Tablespoons butter
1/2 teaspoon cinnamon
Cream sugar and butter till fluffy. Add eggs, one at a time. Mix well. Combine 2 cups flour, baking powder, salt. Add to creamed mixture alternately with milk and water. Toss blueberries in remaining 1/4 cup flour and fold into batter with cream cheese. Pour into greased and floured 9 x 13-inch pan.
For topping: Combine sugar, flour and cinnamon. Cut in margarine until mixture resembles coarse crumbs. Sprinkle over batter. Bake at 375 degrees for 1 hour.
